The Salt Under the Potato Trick Works!

December 30, 2018 By Kylie Lawson

Watched The Grill Dads on Today Show yesterday. The salt under the potato trick works for non-Hasselback spuds too. Light, fluffy, and an essence of salty goodness.
Also made a seared steak in my large Flameware Skillet. 3 minutes on each side over high and 12 minutes in the oven.

And because the Mister likes a well balanced meal we added green beans
Stop in and check out all these beautiful, handmade, unique, affordable gifts. Treat yourself or a friend. Open Monday-Saturday 10a-5p and Sunday noon-4p. Located 4.5 miles north of Hutchinson off Hwy 15 (17614 240th Street).

Sweet Corn Tomalito

January 15, 2018 By Kylie Lawson

Sweet Corn Tomalito

5 tablespoons margarine, softened
1/4 cup masa harina
1/3 cup white sugar
1/2 cup water
2 cups frozen whole-kernel corn, thawed
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
4 teaspoons milk

In a medium bowl, mix together the margarine, masa flour, and sugar until light and fluffy. In a food processor or blender, blend one cup of the corn kernels with the water and cornmeal just until smooth. Stir into the masa mixture. Mix in the remaining corn, baking powder, salt, and milk until the batter is smooth. Pour into a double boiler.

Place the tomalito over a Clay Coyote Flameware Saucepan of simmering water, and cover tightly with aluminum foil. Steam for 50 to 60 minutes, or until firm. Check water occasionally, and refill if necessary. Stir pudding before serving to give it a consistent texture. Serve in small scoops.

New Year’s Party Appetizers

December 29, 2017 By Kylie Lawson

Looking for some appetizer recipes for your New Year’s get together? Look no further! We’ve got some yummy party pleasers for you.

Our first appetizer is a creamy avocado dip with scallions. Use a Clay Coyote Saucepan to brown the scallions, and mix the rest of the ingredients in a medium bowl. Serve with chips, crackers, or bread.

Next is a shrimp artichoke dip. We’re adding a small twist and throwing in spinach for a shrimp spinach and artichoke dip. This dip is made hot, so prepare in a Clay Coyote Cazuela. Serve with mini bread slices or pita chips.

Holiday Shrimp Artichoke Dip (VIDEO Recipe)

Our last recipe is ‘devils on horseback.’ If you’re wondering what that is, it is bacon wrapped dates! For an added touch, we like to serve them with blue cheese. These little guys would be great to serve on our Clay Coyote Trays.

Stop in the Gallery to get your New Year’s party essentials! We’re open Saturday, December 30th 10-5pm and New Year’s Eve 12-3pm. We are closed New Year’s Day.

Have a safe, fun, and tasty New Years!

Quick and Easy Paella

December 27, 2017 By Kylie Lawson

Quick and Easy Paella

4 1/2 cup chicken broth

1 teaspoon saffron threads

4 tablespoons olive oil

1 lb fresh or frozen medium shrimp, peeled and deveined

1 link Spanish chorizo, thinly sliced

2 cup boneless chicken breast, cut into small pieces

Salt and black pepper to taste

1 cup onion, finely chopped

1 cup red pepper, finely chopped

5 garlic cloves, minced

3 cups paella rice

1 cup canned diced tomatoes, undrained

1/4 cup fresh lemon juice

1 teaspoon smoked paprika

1 cup fresh parsley leaves, chopped

1 cup frozen peas

Combine chicken broth and saffron in a Clay Coyote Flameware Saucepan. Bring to a simmer and keep it warm over low heat. Do not boil. Rise and pat dry the shrimp with a paper towel. Season with salt and pepper to taste.  Set aside. In a large paella pan, or a very large skillet, heat 2 tablespoons of oil over medium heat. Add chorizo to the skillet, sauté for 3 minutes, stirring occasionally. Remove from skillet and set aside. Add chicken to the skillet and cook for 5 minutes, or until browned and cooked. Season with salt and pepper to taste. Add onion and red pepper; cook for 5 minutes, stirring occasionally. Add garlic; cook 1 minute. Add rice; cook for 2 minutes, stirring constantly. Stir in hot chicken broth, cooked chorizo, tomatoes, lemon juice, paprika, 2 tablespoons olive oil, and parsley; mix to combine. Reduce heat to medium-low and bring to simmer; cook, for 10 minutes, or until the rice has absorbed most of the broth and almost tender. Arrange shrimp over the rice. Scatter snap peas over. Reduce heat to low, cover with foil or lid, and cook for 5 – 10 minutes, or until peas are crisp-tender, and rice is tender. Remove from heat and let stand, covered, for 10 minutes.
