Mexican Soup

A perfect meal for these cold Minnesota temps we’ve been experiencing lately!

Mexican Soup

32 – 36 oz of chicken broth
2 C fresh salsa (if available or canned)
1 lg. can hominy
1 lg. can black beans
2 large chicken breasts cooked and cubed (turkey)

Mix all ingredients together in a Clay Coyote Flameware Saucepan and heat through.

Garnish with:
– crushed corn chips or taco chips
– shredded cheese
– sour cream
– avocado

Fantastic Fall Recipes!

Fall has been in full swing now for a few weeks, so it’s time to get started on cooking those delicious fall recipes. We picked out a few fall worthy recipes that can be made in our handcrafted clay pottery available at the Coyote. You’re in for a real treat!

We’ll take you through a meal you can serve to your guests and family starting with an appetizer. We have a spinach and artichoke dip and a cranberry salsa that you can make and display on one of our handmade trays, while putting tortilla chips in the middle for the perfect serving look.

Next we have a few main dish options for you. We have a baked potato soup that you can prepare in our flameware saucepans, a baked mac and cheese you can make in our flameware cazuela, a grilled pork and veggies recipe that’s perfect for our flameware grill basket that is one of a kind, and a “beer can” chicken recipe that can be used with our clay chicken bakers. All of these recipes are warm comfort foods that will bring a smile on your face during those cool fall evenings.

If you are looking for a side dish for any of those options above, we chose a delicious and healthy recipe: roasted brussel sprouts with bacon. Bacon makes everything taste great, so these brussel sprouts are sure to win your heart over. This dish can be easily prepared in one of our flameware skillets.

For dessert we have chosen an apple pumpkin crisp, because what doesn’t say fall more than apples and pumpkins? This crisp can be made in our cazuela. Granted a round crisp is not traditional, but it’s a new and unique way to present it to your friends and family. Make sure to serve with whipped cream or vanilla ice cream.

Lastly, we’ve chosen a drink recipe for you which is a personal favorite: hot apple cider. This relaxing drink can be served in our vinegar crock because it has a spout perfect for pouring drinks. You can also find your perfect apple cider mug here at the Coyote. Serving a cinnamon stick in the mug will add just the touch of beauty and functionality, because you can use the stick as a stirrer!
