Tomato Season: Classic, Burrata, or Avocado, How do you BLT?

I love tomato season. There are so many ways to enjoy tomatoes …. popping them in your mouth while picking little sun golds or cherry tomatoes in the garden;  raw with a little salt, grilled for salsa, purred with garlic and basil for pizza, or cooked for hours to make a rich pasta sauce.

But one of the purest ways is on a good ol’ fashioned BLT sandwich.

There are many fun spins on BLTs, but the classic truly deserves a place in the Sandwich Hall of Fame. 

  • We use our homemade no-knead bread baker to make a fresh loaf of sourdough every week. But any good, sturdy, toasted bread will do.
  • A little mayo, with crushed pepper.
  • Layer on bacon (we cook ours in our Small Flameware Skillet, but the microwave Clay Bacon Cooker also works wonders).
  • Slice up tomatoes, we prefer beefsteak or heirloom for BLTs, but you can also make an easy tomato jam with cherry or sun gold tomatoes and spread that on (roast in the oven with a little olive oil and garlic until blistered, about 20 minutes on 450, and then smash together).
  • Wash and pat dry crispy lettuce.
  • Assemble and Voilà!

  • BLAP: Bacon, Lettuce, Avocado, Peanut Butter (I made this one up, but you get the picture … you can try any combo that sounds good to you)

Important Now More Than Ever to Shop Small on Small Business Saturday!

Covid-19 has caused a whirlwind of changes for everyone this year, especially to small business owners. Small businesses everywhere were hit hard with financial difficulties with the shutdown. While we’ve remained resilient during these times, we still need your support now more than ever.

Small Business Saturday is right around the corner on November 28th this year. This is such an important day for everyone to come together and support local businesses who have been impacted by the virus.

Shop Small Saturday was started in 2010 by American Express during the recession to help encourage local shopping to help communities thrive during the tough times. The date is always the Saturday after Thanksgiving to encourage local shopping for the holiday season.

Because the first Shop Small Saturday was such a success, the following year in 2011, the Senate unanimously passed a resolution in support of the day. All 50 states participated and even got a shout out from the then President.

Some statistics from 2019 show that for the 10th Annual Small Business Saturday, an estimated $19.6 billion in spending was recorded, a record high! This goes to show that when shoppers come together to support local businesses, it really makes a difference!

You might not realize it, but every time you grab a coffee from your locally-owned café or buy handmade art from a local shop, it helps business owners and the community it serves thrive. In fact, American Express stated that for every dollar spent at a local business in the United States, 67 cents stays within the local community. That’s awesome!

Introducing the first ever Clay Coyote Mix & Match Lid Sale. We have tons of lids in every glaze, size, and shape. We even have some in classic Coyote glazes like Todd Lake, Space Tomato, Old Celadon Green, Latte, Pistachio, Blue/White, Sunburst, Black/Red, and more!

All lids are $15 and there’s a limit to 5 lids per customer, per day, while lids last. 

Need some lid ideas? 

  • Turn a berry bowl or colander into a veggie steamer
  • Add a domed lid to plate and make a brie baker
  • Use lid to keep food covered and warm
  • Replace (or hide a back-up) lid for your favorite pot … just in case
  • Mix and match different glazes to create a custom, one-of-a-kind designs

Our hours are 10am-5pm daily and Sunday’s noon-4pm.

The Clay Coyote is located 4½ miles north of Hutchinson on 240th Street. Look for the blue road signs that say “Clay Coyote Pottery & Art.”
