Back To Grilling: Tips & Recommendation for your Summer Meals

It’s time to bring out your grill, open up the cabins, and get back to spending as much time outside as possible. On Saturday, May 21st, Morgan shared these tips live with the team at CBS’ WCCO Channel 4.

Grilling Vegetables: A favorite around our house. Our Grill Basket lives on the counter all summer because we put it into action almost every night.

Tip: We skip the skewers and toss all the veggies in to the Grill Basket at once. The secret to making sure they all cook evenly is cutting the veggies in relation to their density based on the medley of your choice.

For example, if you’re doing potatoes, mushrooms, zucchini, and onions. I’d cut the mushrooms and zucchini largest, then onions, and potatoes the smallest. That way they will all finish cooking at the same time.

We have a cheat sheet chart (click to enlarge), but every medley is different so you modify your chopping sizes depending on the combo you choose.

Tip: A little oil goes a long way, the clay grill basket helps to spread the heat out (unlike a metal version that conducts heat and is known for burning or overcooking).

We use a cookie sheet to carry the Grill Basket from the kitchen to the grill to catch any drips. The added bonus is that the cookie sheet also has room for hot pad, tongs, and a cup of wine.

Other recommendations:

  • Don’t stir or turn too often, vegetables can be a little delicate, so stirring at the halfway mark will keep them from getting mushy.
  • Make extras. The grilled veggies are great added to cold pasta salads or with eggs for Sunday morning hash.

Looking for other ways to cook outside this season?

  • Cook your pizza outside. No one wants to heat up their kitchen, take your favorite easy weeknight meal outside. The Flameware Pizza Stone on the grill takes only about 8-minutes compared to 15 minutes in the oven. That’s because there is less air around the stone. You’re essentially creating a brick pizza oven in your grill.
  • Cook your fish on a Flameware Tray: Last fall we worked with local anglers to develop a new fish grilling tray. They strongly recommended that the piece be designed to keep the juices in to not dry out the fish. We like that it is narrow and can leave room for a Grill Basket next to it.

Dating back centuries ago, pottery has always been a popular form of artistic expression and has played a critical role in creating a captivating space. Functional pottery is beautiful in both form and function, purpose and practicality. It’s created to evoke joy through everyday use. After all, there’s no denying that drinking from a handmade mug or serving dinner in a bowl created by a local artist means so much more. From dishes and decorative pieces to flowerpots and lamps, finding a unique piece to add beauty in any room of the house can make all the difference.

While there aren’t many rules when it comes to expressing your personality and style through pottery, one thing’s for certain –  it shouldn’t be stored away in a cupboard. Don’t know where to start? We’ve asked artists, from Lake Tahoe, CA all the way to Orlando, FL, to share their best functional pottery ideas to complete your home this new year.

Mix and match colors, patterns, and textures

Ceramics and pottery in the home don’t have to match. You can create a dinner set that is so much more interesting if you mix and match colors, patterns, textures. Pick things that call to you. They can have a similar vibe or be work made by the same artist but in different styles. You’ll end up with an eclectic but unique set of dinnerware. – Emmanuelle Ceramics

Buy the right clay for the right job

We specialize in “Flameware” pottery, a special clay and glaze combination that allows the user to cook with the pottery over direct heat. Not all pottery can do this, in fact, most pottery is designed for serving or baking, but not for extreme temperature changes. When buying pottery, you want to make sure it’s the right clay for the right job. Keep an eye out for distinctive, handmade pieces

When contemplating your table, look for distinctive hand-made pieces, organic and out-of-the-ordinary. Pair them with classics and mix up your table. As an item is handmade, always look for the maker’s mark usually found underneath the piece. Look for pieces that compliment the aesthetic of your home – earthy, minimalist, wabi-sabi etc. – Firing Time

Connect with the story, upcycle, and mix materials

Look for pieces with a story to add emotional depth to already-gorgeous design choices. These can be mixed media pieces incorporating upcycled ceramic materials, handmade items from a region you love, or pieces with a unique creative process. Upcycle broken pottery to keep the ceramic theme strong in your home decor. This is a great way to re-incorporate a beloved item that can no longer fulfill its original purpose. Incorporating mixed materials is a great way to tie multiple decor items together across various rooms or in a small space. one of my favorite functional pottery ideas is to declutter and be selective with everyday items that express your unique taste and bring you joy. I love the clean look of floating shelves to show off the form and textures. Also, it’s fun to change them seasonally. – Lily Pon Ceramics

Display your pottery on windowsills

I love decorating my window sills with windowsill planters, bud vases, and other smaller-footprint pottery pieces. I especially love bud vases because all you need is a flower or two from your yard, or an evergreen branch in winter. And for windowsill planters, a great tip is to find a local plant seller who can help you choose the perfect small plant for your particular window’s light and temperature. – Ros O’Brien Ceramics 

Uncover inspiration in ordinary moments

Weaving ceramics into your daily life and home may inspire you to experience pleasure in ordinary moments. Enjoying your morning ritual of coffee or tea from a handcrafted ceramic mug may offer a pleasant start to your day. A ceramic candle on your coffee table can set a beautiful evening glow to a room to curl up with a book or glass of wine with friends. Fresh cut flowers or a cascading plant from a ceramic wall planter can add some greenery to any room. Add a splash of color to your space 

Planters are a great addition to any room because they can add a splash of color and enliven a space. To avoid overwatering look for a planter that has drainage holes and is also glazed on the inside. planters that are unglazed on the inside tend to retain more moisture for a longer period of time. Besides using color as a determining factor, handmade ceramics can also have different textures that make a piece unique and tie a room together. R&D: Making of the Fish Tray

Customers have been asking for a long, narrow, Flameware tray for fish. We set out to create it.

Initially, we wanted to add holes to the tray, similar to the Grill Basket, to allow the juices to drain off. But after consulting with our “fisher folk” we landed on a no-hole option.

Then came the handle design. We wanted something similar to our other Flameware Line, but nothing too large or bulky. We also tried no handle, but it made it harder to pick the tray up off the grill.

Once we had a good idea of the design, we sent it home with of a few of our customers to test it out. The results were in! They loved it. No holes, add a handle, and it was fantastic.

One of our favorite regulars, Kristin, traveled to her aunt’s outfitters, Kenai River Cabins in Soldotna Alaska, and caught the beautiful salmon you see in the photo above. Now we have a new travel destination!

We’ve been product testing this new tray out for the last few weeks and the fish comes out great every time. We also like that you can add a sauce, like a brown butter or coconut curry and it wont dry out.

Easy Grilled Salsa Recipe

Looking for a crowd pleaser? Want to take your tailgating game up a notch? Trying to find ways to use your hearty pepper and tomato crop?

Try this super easy step-by-step recipe for grilled salsa. We served it over the weekend to rave reviews!

Grilled Salsa: Step-by-Step

  • Halve tomatoes (we used 5)
  • Rough chop onions and peppers (we used 6 shishito peppers, 2 red fresno chili peppers, and 1 infinity pepper) … need help on pepper hotness, check the Scoville scale.
  • Peal a whole clove of garlic.
  • Put everything into your Clay Coyote Flameware Grill Basket.
  • Add a little olive oil, just enough to keep everything moving, and toss.
  • Put the grill basket over medium high heat, cook for 15-20 minutes, stirring once to make sure nothing is sticking and everything is getting equally grilled.

You can use metal tongs on the grill basket, see how a little oil goes a long way:

 

  • Take off the grill when the peppers are blistered and black, and the tomatoes are softened.
  • Let cool.
  • Puree in a blender or food processor with a whole bunch of cilantro (yes you can toss in the stems) and some salt. (We used about 1 tablespoon for 6 cups of salsa). Taste with a chip, that helps make sure you don’t over salt.
  • Want it to go farther? Add canned stewed tomatoes and puree until it’s the consistency and amount desired. (We used an additional 24 oz of tomatoes to make 6 cups of salsa.
  • Serve or store in an airtight container up to 2 weeks in the fridge, or freeze for up to 12 months.
  • NOTE: This is a fun dish, add in other things that appeal to you (like lime); remove things that don’t fit your fancy (like infinity peppers or an entire clove of garlic). The best way to know you’re on the right track is to taste test as you go along. I’ll be honest, I’ve made this 20 times and it’s never the same twice, so embrace whatever’s in your larder and know it’s going to be amazing. 

 

Rough chop
Grill on medium high for 15-20 minutes
You’ll know it’s done when peppers are blistered and black and tomatoes are soft
Cool
Puree with cilantro and salt
YUM!
Serve with chips and other dips!
