It’s Taco Tuesday!

Well folks, we’ve made it through Monday and now it’s time to reward yourself by celebrating the best weekly holiday there is: Taco Tuesday!

Morgan came prepared with homemade tacos for lunch today. I have written about my opinion on the best kind of tacos before. Even though these weren’t al pastor, they still look amazing. She prepped everything for them last night, and made sure they were good for Taco Tuesday by having them for dinner on Monday.

I like the way she thinks.

As usual, everything was cooked in Clay Coyote Flameware.

She cooked up some chicken and green peppers in the large flameware skillet, and a batch of refried beans in the flameware saucepan. She built the tacos with warmed tortillas, sour cream, the chicken and peppers, red cabbage, salsa, hot sauce, and homemade guacamole. The beans were served on the side with some cotija cheese on top.
