More than a decade ago, cookbook author, Paula Wolfert put the Clay Coyote on to the idea of home-brewed wine vinegars. We developed a handcrafted vinegar crock that holds ½ gallon of liquid along with a spigot specifically placed to allow the residual “mother” to form at the bottom.

I’ve had 4 of these crocks- 2 for red wine and 2 for white wine vinegars for maybe 10 years. Homemade vinegar is so much better and so much more potent than those awful, chemical tasting ones you pay big bucks for in the supermarket.
