Fajitas in a Grill Basket
The thing I like to make most often in my Flameware Grill Basket is chicken fajitas. It’s like you’re at the local Mexican restaurant with all the smells and sizzling sounds right at home. And an added bonus is that you don’t have to drive after a margarita!
Ingredients:
1 pound boneless-skinless chicken breasts
2 bell peppers
1 yellow onion
1 tablespoon olive oil
1 tablespoon fajita spice mix (blend of salt, black pepper, paprika, oregano, cayenne pepper, garlic, celery, basil, nutmeg, cumin, marjoram, thyme and rosemary.)
1 jalapeño (optional)
Process:
- Cut up chicken into strips the size of your index finger.
- Cup up onions and peppers to be the size of an index or pinky finger.
- Toss in oil and fajita spices (we use Penzeys Fajita seasoning).
Put all of it into your grill basket (use cookie sheet to prevent dripping) and place on grill over medium-high heat for 20 minutes (stir once at 10 minute marker).
- The chicken will be moist and fully cooked, the peppers will be soft, and the onions will be caramelized.
- Using a hot pad, transfer the grill basket to a cookie sheet and bring it in to serve hot, sizzling, fajitas right at your dinner table. Look at that spread!
Pro Tip:
I use red, yellow, or orange bell peppers. That way the only green one is the jalapeño and then anyone who wants to skip it can easily see it.
