No-knead bread was a big buzz in 2006 when it was introduced by NY Times author Mark Bittman from his story on James Lahey of Sullivan St. Bakery in NYC. Now it's settled into an almost standard baking method. So we finally designed a baker specifically for making this wonderful bread. You can also use it as a general covered baking dish and casserole. Take a peek at our blog entry for the recipe and tips. We have since done much experimenting and found this really makes a superb loaf, but you do have to plan ahead for the 12-18 hours raising and the 2 hours second rise and 1 hour baking sequence...but no kneading! There are 3 books we recommend, Lahey's "My Bread", Zoe Francois' "Artisan Bread in 5 Minutes a Day", and Nancy Baggett's "Kneadlessly SImple". Our Bread Baker measures approximately 9" in diameter. The base is roughly 3" high and the total height of the piece is around 7" to the tip of the handle.
