CASSOLE: I made the Anthony Bourdain recipe from the Les Halles cookbook, no
breadcrumbs at all on the top, just the crisping of the beans.  Just a
different way of doing a cassoulet, from what I hear.  Will definitely try
Paula's recipe sometime, since I have a lot of pork belly in the deep
freeze.  Just have to find a source for the toulouse (sp?) sausages...not
into making my own.  I do my own duck confit but not ready to do my own
sausages.

Glad you liked the picture.  Do whatever you wish with it.

I have been going to the website eGullet.org alot (I'm such a foodie).  That
is where I learned of your wonderful cassole in the first place.  Those
crazy foodies (me included) like to take pictures of their food!!!!
Pictures of my cassoulet in your cassole have made it there.  I'm sure you
have had quite a few sales from us folks there!  I'm already thinking about
what glazes my friends would like and considering items for BD and next
years Christmas presents.  Love the one that is black with the gold imprint!
How many different glazes of a piece is one person allowed to have...not
allowed....should have, without it looking TOO obsessive?

Thanks again for your care to my order.

Enjoy getting back to the glazing and firing!!!!

CASSOLE:  Wow! Thank you so much Betsy.  That's FAST!

I operate a small "cooking" oriented internet bulletin board (private membership, about 100 members). I was recommended to your site by Martha S(from Fort Scott, KS.) I believe she recently placed an order for a vinegar jar.  You can be SURE we'll both highly recommend your site to our fellow "foodies".

I really look forward to receiving the handmade piece and hope to do business with you and Tom again soon.  Thank you again,  Mary V.  3/20/07
Dear Betsy and Tom,

Oh my gosh!  My gorgeous cassole arrived today--- I absolutely love it!  You both do such LOVELY work. Bravo!  You can be sure this magnificent piece will hold a place of prominence in my [open] kitchen.

Thank you so much for producing these beautiful works of art, and for the smooth and easy transaction.  I hope to shop with you again very soon, and you can be sure I'll recommend Clay Coyote very highly.  And thank you for the additional information, as well as Paula's recipe for Cassoulet de Toulouse;  I have her books, but this makes it super convenient.

Very kind regards,  MaryV/Oregon   3Mary

Thanks for your kind words.  When you make your cassoulet you will have to
send us a picture that we can put on the website or the blog.  I'm glad you
are pleased.
